Let’s Eat Sushi (again)!

When I arrived at Uppsala as an exchange student, I was amazed by its multiculturalism. One of the best places to feel it was indeed the vegan food workshop at Ungdomens hus! Here you not only get a possibility to cook together with amazing people from all over the world but also visit a new cuisine every Sunday.

During my last workshop, we took a tour to Japan. While I am a vegetarian myself, vegan sushi was not a new thing for me. It is quite easy to interchange fish with cucumber or avocado. But at this workshop, we took a step further and made vegan tuna and even mayo (followed by a vivid discussion on which mayonnaise is the best one)! We also added mango bites to sushi (worth trying!).While waiting for the rice to cook, we participated in a quiz about the fishing industry which informed us about the damage fish consumption causes for the oceans.

To warm ourselves on the rainy Sunday evening, we also made miso soup. Interestingly enough, even cold things can warm up your heart! As, for example, a dessert we made – traditional Japanese sweet mochi with a not-so-traditional choice to put vegan ice cream inside. Yummy! We even had some frozen banana ice-cream on the side. What a time to be alive!

Greetings from Luxembourg,Bernadeta

All the recipes have been made during our workshops before and can be found here!
